Lentil Kofta / Lentil Meatball (Vegan Meatballs)

I never get tired of lentils. Whether made into soup, rice, or even snacks, I just love them. Besides their savory taste, they are also very affordable. Most importantly, lentils are rich in vitamins and high in protein, which is very important for the body. They are healthier than meat because they contain no cholesterol. That's why I often share recipes using lentils. This time, I'm making kofta, also known as vegan meatballs. Delicious! In this recipe, you can make two dishes. If you fry them until crunchy without adding tomato sauce, they can be a snack, also known as "Lentil fritters." And if you mix them with tomato sauce, they can be a main dish. For this recipe, I'm using brown lentils.
Cooking Instructions

Soak the brown lentils overnight to expand and soften.

Drain the soaking water, rinse with clean water, and drain again until dry. Place in a food processor and blend WITHOUT WATER until smooth.

Transfer to a bowl, add cornstarch, salt, minced garlic, seasoning, ground black pepper, ground cumin, ground coriander, chili powder, ground turmeric, and chopped cilantro or green onions or parsley. Mix and knead until well combined and can be shaped into balls.

Add baking powder and mix again until well combined.

Shape into balls as desired.

Fry in hot oil over medium heat. If making snacks or Lentil fritters, fry until crispy and crunchy. If making Kofta with tomato sauce, do not fry until crispy, as they will be cooked again with the tomato sauce.

Remove and drain.

Now let's make the kofta sauce: In a pot, heat some oil, add chopped shallots, and sauté until soft. Add minced garlic and ginger, sauté again until fragrant. Add tomato paste and sauté for a while over low heat to prevent burning.

Add all the spices (from ingredient C) and sauté for a few seconds until cooked.

Add the blended tomato, cook until boiling and the color changes. Add yogurt, stir and cook until the yogurt melts and is smooth.

Add water, cook until boiling. Finally, add the fried Lentil Kofta balls, cook until the sauce thickens and is absorbed into the Kofta. If desired, before turning off the heat, add a handful of fried shallots and chopped cilantro.

And it's done! Serve with white rice, Chapati, Paratha, or as a topping for spaghetti bolognese. Healthy and yummy!
