Ingredients

  1. 2, chopped Onions
  2. 2sticks, chopped Celery
  3. 1large or 2 small, chopped Carrots
  4. 4 TbspCoconut oil
  5. 2 TbspButter
  6. 1-2lbs, cubed Boneless chicken
  7. 1 1/2 TbspTurmeric powder
  8. 1 tspCayenne pepper
  9. 1 tspGarlic powder
  10. 1 Tbspdried parsley
  11. 4Bay leaves
  12. 3 cupsRice
  13. 1 canCoconut milk
  14. Broth or water - enough to make 4 cups liquid with coconut milk (If using water, add some chicken bouillon)
  15. 2 tspBrown sugar
  16. to taste Salt and pepper

Cooking Instructions

    Heat coconut oil and butter in a large cast iron pan over medium-low heat.

  2. 2

    Cook onions, celery, and carrots until soft and fragrant, 7-10 mins.

  3. 3

    Deglaze the pan with 2 Tbsp water, then add chicken.

  4. 4

    Sprinkle turmeric, cayenne, garlic powder, parsley, bay leaves, salt, and pepper over chicken.

  5. 5

    Raise heat to medium, cook chicken until done, stirring occasionally, about 8 mins.

  6. 6

    Add rice, stir to coat, and cook for a couple of minutes.

  7. 7

    Pour in coconut milk and stock mixture, stir, and bring to a low boil.

  8. 8

    Cover and cook on low heat for 20 minutes.

  9. 9

    Turn off heat and let rest, covered, for 10 minutes without peeking.

  10. 10

    Fluff gently and serve with our homemade halal white sauce.
