Ingredients

30 min/24hr
  1. 250 gbread flour
  2. 2 cupsbutter, cubed and chilled
  3. 3 gsalt
  4. 55 gwater, ice cold

    Place flour, butter salt in the bowl of a kitchen aid mixer, chill in fridge until cold.

    Use paddle attachment and mix on low until crumbly

    Add ice cold water mix until smooth, at least one min

  4. 4

    Shape into smooth ball, press into 4 cm thick disk. wrap in plastic wrap and chill for 4 hrs

    Roll rough, mold and refrigerate for at least one hour, overnight is best (cover in plastic wrap after 1 hr)

    Fill and bake as per pie recipe or blind bake.

    When I blind bake mine I cover with tinfoil and pour in dry beans. Bake in glass pie pan placed on a cookie sheet at 400 for approx 30 min. Take tinfoil off after about 20 min or once edges or golden brown. Prick the pie crust to prevent from rising.

    Alternative blind bake method place tinfoil pie plate on the pie crust and a ramekin on top. Bake approx 20 min until edges are set and golden brown. Remove tinfoil pie plate and ramekin. Prick the pie crust with fork to prevent rising and bake for approx 15 min longer.
