New England Corn Chowder

Ingredients

6ish
  1. 1/2 poundbacon, chopped
  2. 1medium onion, small dice
  3. 4medium potatoes, diced
  4. 2 cupswater
  5. 24Saltine crackers
  6. 2 cupsmilk (I use cashew)
  7. 2 cupsfrozen corn, thawed
  8. to tasteturmeric, S&P

Cooking Instructions

    In your soup pot, cook bacon over medium heat

  2. 2

    When bacon is almost done, add onion and cook til translucent

  3. 3

    Add potatoes and water, cook until potatoes are tender

  4. 4

    As potatoes cook, crush crackers and put into a bowl, add milk and let sit

  5. 5

    When potatoes are tender, add cracker and milk mixture and corn. Add seasoning

  6. 6

    Simmer until heated through

  7. 7

    Make it vegetarian, omit bacon and cook onion in 3 Tbs butter (or refined coconut oil to make it vegan)

  8. 8

    Serve with biscuits

  9. 9

    To make fish chowder just add 1 pound of haddock or a chowder mix of any white fish when adding the crackers and corn.

Started cooking/baking with Gram just as soon as I was old enough to stand in a chair, with her apron tied around my chest. Made my first solo Thanksgiving meal at age 8. Putting a new flair on classic nothern New England style cooking.
