Ingredients

30-35 minutes including prep
4 servings
  1. 1onion, chopped
  2. 1carrot, diced
  3. 1parsnip, peeled and diced
  4. 1potato, peeled and diced
  5. 1 1/4 litreshome-made chicken stock
  6. 150 gleftover cooked chicken, diced
  7. 1 tspdried thyme
  8. 1 tspsmoked paprika
  9. 1/2 tspsumac
  10. 1small handful coriander stalks, chopped
  11. Salt
  12. Ground black pepper
  13. 1small handful coriander leaves, chopped (to garnish)
  14. 1 dashper soup bowl Maggi Würze (liquid seasoning). Optional

Cooking Instructions

30-35 minutes including prep

    Put all the ingredients except the coriander leaves garnish in a saucepan and stir well.

    Cover, bring to boil and simmer for 20-25 minutes, stirring occasionally. Season to taste - but you may not find this necessary.

  3. 3

    Serve piping hot with coriander garnish and bread of your choice. A dash of Maggi Würze in the soup bowl goes well but that’s very much a personal taste.
