I came up with this recipe for bento. Since breading and frying fish in the morning can be a hassle, I thought of a way to make it easy and delicious.

Ingredients

4 servings
  1. 150 gramsAji (Horse mackerel; filleted)
  2. 1 dashof each Salt and pepper
  3. 2 tspCurry powder
  4. If using store-bought curry roux, crumble it finely. You can also use powder curry + soup stock granules.
  5. 1 tspOlive oil
  6. 1 bunchPanko
  7. 1Oil for frying

Cooking Instructions

    Season both sides of the fish with salt and pepper. Coat with curry powder.

  2. 2

    Drizzle with olive oil, making sure to cover all parts, then press the panko on both sides.

  3. 3

    In a heated frying pan, place the fish and fry both sides until cooked thoroughly. These are handy to store fried and then frozen.
