I have no idea if something like this exists , but I was feeling inspired after I saw some British people cooking eggs in the oven. Haha, it just sparked my imagination and I decided to do this. Plus, it will make you cool and you can use up some potatoes.

Ingredients

30 Minutes
2 People
  1. 1Russet Potato
  2. 2Large Eggs
  3. 2 SlicesThick Bacon
  4. 1Onion
  5. 1Green Onion
  6. 2Mushrooms
  7. SplashWorcestershire Sauce
  8. Corn Starch
  9. Salt & Pepper to taste

Cooking Instructions

30 Minutes
  1. 1

Wash, peel, slice and chop all applicable vegetables. Using the small holes on the grater, grate potatoes and rinse. Squeeze liquid out of the potatoes, place them paper towels and squeeze again. Fry two slices of bacon and reserve bacon grease.

  2. 2

In the bacon grease, add all vegetables aside from potatoes and cook until beginning to brown. Season, and add in a generous splash of Worcestershire sauce to deglaze the pan.

  3. 3

Ideally, do you want to have two of these kitchen gadgets. I believe they call them spiders. Sprinkle a dusting of corn starch over the grated potatoes and toss until all potatoes have a light coating. Press potatoes into spider until you have what resembles a bird nest. Fry the nest in hot oil until golden brown. Remove and drain on wire rack.

  4. 4

Poach a couple of eggs. Begin to assemble the bird nest. Start off with the vegetables and place the poached egg on top. Add chopped bacon on and around the egg. Finish what’s another splash of Worcestershire sauce.
