Quick dessert for 1 (or 2)

I'm a sucker for a good chocolate brownie/cake. I found this chocolate mug cake recipe and it is a true gem. It’s almost like cheating… you get a decadent ooey-gooey treat exploding with chocolatey goodness in less than a minute!

I should know because I’ve tried a few. 😜 This recipe consistently yields a cake which is chocolatey, light, and fluffy. The best part is that it fully cooks under two minutes in a microwave! And it’s so easy that my six-year-old daughter is capable of making it! It makes enough cake for 2 people. I found a really good mug cake online but made my own substitutions to make it a bit more healthy and to fit in with my 21 Day Fix Healthy eating plan. It's a "healthy" version of a decadent treat!
