Chunky Banana Ice Cream

Ingredients

3 cups (720 ml)
  1. 5medium bananas, peeled and frozen
  2. 1/3 cup (79 ml)unsweetened almond milk
  3. 2 tablespoons (9 g)finely grated coconut
  4. 2 tablespoons (32 g)creamy peanut butter
  5. 1 teaspoonvanilla extract
  6. 1/4 cup (37 g)chopped walnuts
  7. Optional: raisins or chocolate chips

Cooking Instructions

    Place the bananas, milk, coconut, peanut butter and vanilla in a food processor; cover and process until smoothly blended.

    Transfer to a freezer container; stir in walnuts and raisins if using. Freeze for at least 2 hours or overnight. Drizzle with salted caramel or serve alone.

    If you find it too hard after a few days, cut into small cubes and pull in a blender or processor until smooth again.
