From my Ate's recipe version. I just used oyster as alternate in marinating the pork to avoid too salty taste.

From my Ate's recipe version. I just used oyster as alternate in marinating the pork to avoid too salty taste.

Marinate pork in oyster sauce and 10 pcs calamansi for at least 30 minutes.

Remove pork from marinade. Fry until golden brown, then set aside.

Sauté white and red/white onions briefly, do not overcook. Set aside.

Return pork to pan. Add marinade, soy sauce, add 5 pcs calamansi juice and some water. Bring to a boil.

Add more water as needed. Simmer until pork is chewy and tender.

Add sautéed onions, salt and black pepper to taste. Serve hot.
Tips
Adjust the marination time for a stronger flavor, and feel free to add your favorite vegetables to the sauté.
