Cooking Instructions

Cut the pumpkin into quaters. And remove seeds. Do not peel

Put on the oil and the italian herbs
- 3
Put in the oven 200°C for about 45 min. The pumpkin must be tender
- 4
Meanwhile cut the celeriac and the onion into medium size peaces
- 5
Put some oil in a pan and sweat the veg.

Put in the water and the stock cubes. Boil until the pumpkin is ready.

Cut the pumpkin into big pieces and put in the soup. Boil for another 10 min.

Put in the cream cheese

Mix the soup. Add some water if it is to thick.

Add pepper. And serve. Nice with fat croutons

I saw this in a recipe list for dishes that could be easily made and with only simple ingredients. I added some coriander and this is how I remember making it.It's plenty delicious without the coriander (or with parsley), but adding it gives it a nice taste and even more flavor. There was nothing to cook at home and I thought of making Pumpkin Soup and to taste it.(husband loves pumpkin so no worries ;-) ) so made this easy recipe with the things I had at home..
