Ingredients

  1. 1 bunchlong beans/snake beans/yardlong beans (400g)
  2. 2shallots - roughly chopped
  3. 2bird eye chilies (adjust to your liking
  4. 2 tbspasian dried anchovies or use dried shrimps
  5. 1 tbspdark soy sauce
  6. 1 tbspOYSTER SAUCE or to taste
  7. 1 tbspsugar
  8. 💡 VARIATIONS
  9. 1. Replace sugar with sweet soy sauce and adjust the amount of dark soy sauce
  10. 2. If you don't have dried anchovies or dried shrimps, use diced chicken or you can omit it altogether
  11. 3. Replace oyster sauce with chicken seasoning powder or chicken bouillon to taste

Cooking Instructions

  1. 1

    Clean & cut long beans. Next, for sambal, add shallots, dried anchovies & chillies to the mortar. Use the pestle to crush and mix until you have a rough texture mixture of sambal.

    Heat 3-4 tbsp of oil in a wok. Add the above sambal to hot oil. Sauté until aromatic and ingredients are slightly golden.

    Add the beans. Cook over medium low heat for 3-5 minutes until beans are wilted. Add 1/4 cup of water to continue cooking the beans. Add seasonings- dark soy sauce, oyster sauce & sugar. Continue to cook until beans are soft and liquid is almost completely gone. Taste and adjust seasonings accordingly. Serve immediately over rice.
