Ingredients

  1. 1/2medium sized cabbage
  2. Carrots
  3. Spring onions or green vegetable ( ugwu, spinach, iyanaipaja,
  4. Cooking oil
  5. Scotch bonnet peppers
  6. Plum tomatoes
  7. Red bell peppers
  8. Onions
  9. Fish(any protein of choice)
  10. Salt to taste
  11. Seasonings
  12. Ginger and garlic paste

Cooking Instructions

    Wash all veggies and cut into desired sizes and shapes

  2. 2

    Roughly pound peppers except tomatoes that will be crushed

  3. 3

    Add 1shallow cooking spoon of oil to a skillet, add ginger and garlic paste, stir fry for some minutes, add chopped onions, spices, salt and stir to saute until translucent. This helps the oil get infused with flavors

  4. 4

    Add peppers (scotch bonnet and red bell peppers), stir fry, add carrots. Cover the pot to allow carrots soften a bit.

    After 1-2 minutes, stir add fish chunks already fried add deboned(I left some whole which I later added)

    Add cabbage, stir, check for taste and adjust as required. Add sliced vegetable, whole fish and crushed tomatoes, gently stir to avoid fish breaking into pieces. Cover and simmer for 2minutes. Cabbage Sauce is ready. Pair with rice, yam, potatoes, bread, pancakes, plantain or eaten alone.
