Ingredients

  1. 3raw mangoes
  2. 2 tablespoonscrushed jaggery
  3. 1 teaspoonfennel seeds
  4. 1/2 teaspoonnigella seeds
  5. 1/2 teaspooncumin seeds
  6. 1/2 teaspoonmustard seeds
  7. Salt to taste
  8. 1/2 teaspoonblack salt
  9. 1 pinchasafoetida
  10. 1/2 teaspoonturmeric powder
  11. 1/2 teaspoonred chili powder
  12. 1/2 teaspooncoriander powder
  13. 1/2 teaspoonfenugreek seeds
  14. 2-3whole red chilies
  15. 2 tablespoonsmustard oil

    Peel the mangoes and cut them into small pieces. Heat oil in a pan and add asafoetida, cumin seeds, mustard seeds, fennel seeds, and nigella seeds. Let them crackle. Add the chopped mangoes, mix well, and stir for 2-3 minutes.

    Add turmeric powder, both salts, red chili powder, and jaggery. Mix well. Cook for 2 minutes, then add 1/2 cup of water.

    Cook on medium heat for 5-7 minutes, stirring continuously. Do not let it become too thick, as it will thicken further upon cooling.

    Once cooled, store in a jar. Serve with meals or with puri and paratha. This tangy, sweet, and spicy mango chutney will be loved by everyone.
