Pan-seared salmon with mashed potatoes and roasted asparagus

BOIL THE POTATOES. Get that outta the way. It took me about 30-35 minutes, but just boil it and check from time to time if the potatoes are fork-tender. Once done, drain the water but keep the potatoes in the pot. Keep the heat on low.

MASH THE POTATOES. Mash every bit down and remove as much clumps as possible.

Add in the 1/2 stick of unsalted butter. Then, the 1/4 cup of sour cream and 1 and 1/2 cup of heavy cream. Lightly increase the heat to medium and mix into the potatoes thoroughly until the heavy cream emulsifies and thus creates that mashy texture. Feel free to add a tad bit more sour cream for flavor and creaminess.

Once mashy, turn the heat off and add parsley. Set aside.

ASPARAGUS. Get your asparagus, wash with water, and then cut the ends off. Then, put the asparagus in a bowl.

In the asparagus bowl, add 1 tbsp olive oil, 1/2 tsp black pepper, 1/2 tsp paprika, 1.2 tsp garlic powder, and then squeeze half a lemon so the juices pour in.

Mix mix mix! Toss the asparagus around in the bowl, treat the asparagus like a paint brush and the seasonings are paint and swish it around. Do whatever it takes to coat the asparagus with everything.

On a baking sheet, line the asparagus up and bake it in the oven on 375 F for 20 minutes. Let it rest once finished!

SALMON - wash the salmon with a little bit of water and then dry. Then, cut the 2 salmon filets in half to make 4 pieces.

Season the salmon with 2 tsp cajun seasoning, 1 tsp onion powder, 2 tsp garlic powder, 2 tsp lemon pepper, and 2 tsp paprika.

Finely chop the garlic cloves.

On a nonstick skillet, turn it on to medium heat. Add olive oil and and one the pan is hot, add the salmon filets. Cook these for about 3-4 minutes on each side, or until golden brown and slightly crispy. Afterwards, take those out of the pan.

On the pan, add your finely chopped garlic and let that sizzle.

Add half of a lemon's juice in. Just squeeze it onto the pan. It will sizzle, but don't worry, it's safe ;)

Add 1/4 fresh parsley into the pan.

Add the salmon back onto the pan and sear for about 3-4 more minutes.

Once the salmon is at your desired wellness, take it out of the pan.

Serve with the mashed potatoes and roasted asparagus. Enjoy!
