I love making these for breakfast! They are easy and portable. The amount of eggs you use really depends how many you want to make, 2-3 eggs make enough for one maybe two people.

Preheat the oven to 400

Chop bell peppers into small pieces then set aside

Crack eggs into bowl (the amount of eggs you use depends how many egg cups you want to make) add a little bit of milk, salt, and pepper then mix

Spray muffin tin with non stick spray then line with lunch meat

Put shredded cheese in the ham cup first

Add egg mixture

Place bell peppers on top of egg mixture

Top with parsley

Place into oven for 15 minutes
