I love mushroom soups. I had a great mushroom during my trip to Paris and tried to reproduce it. If you have beautiful wild mushrooms in season, you could float them in the soup.

Cooking Instructions

Slice the onion and mushrooms separately.

Stir fry the sliced onions with olive oil in a pot until they become brown.

Add sliced mushrooms to the pot and stir fry with the onions
- 4
Add milk to the str fried sliced onions and sliced mushrooms. Keep heating just before boiling. Add the cube chicken stock and dissolve it

Add 200 ml water then blend with a hand blender. (no heat)
- 6
Add the remaining water and double cream. Keep tasting and adjust with some salt or maybe a bit of chicken stock cube
- 7
(Optional) As I got beautiful wild mushrooms, I sauté them with butter and float them in the soup.

I had experimented, researched and tasted my fair share of mushroom soups. Eventually, I had settled for Heston Blumenthal's version. I love how he adds potatoes to enhance the creaminess of the soup and also the stacking aroma from the addition of leeks.I used a varieties of mushrooms instead of just one. There are so many to choose from, the wild expensive to the underrated cheaper ones. In the end, I settled for my 2 favorite; shiitake and Swiss brown button mushrooms. I got the idea of making this soup after someone made a soup from a stew we had the night before whilst I was travelling.I'm using breast meat, but thigh meat is much juicier. If you want to make this recipe a bit healthier, then omit the flour.
