Just Like Candied Sweet Potatoes? Sesame Dough Monkey Bread

It's already fall! When you think of fall, don't you think of sweet potatoes? Sweet potatoes = candied sweet potatoes? It's simple. This covetous recipe is simple but the bread soaked in syrup is crisp and fluffy and suits the season.
If you don't have a Gupelhupf tin, you can use whatever baking tin you would like.

If it seems like it will burn while baking, cover with aluminum foil. On the other hand, if it doesn't seem to be turning a nice browned color, remove from the tin, flip onto a baking tray, and let it brown on that.
When removing from the tin, when you flip it over, hot syrup will probably drip out, so be careful not to burn yourself!!! For 18 cm [7.1 in] gugelhupf tin (a little less than the size of the tin). Recipe by Youtank

Ingredients

6 servings
  1. 200 gramsBread (strong) flour
  2. 50 gramsCake flour
  3. 25 gramsSugar
  4. 3 gramsSalt
  5. 25 gramsButter
  6. 180 gramsMilk and eggs
  7. 3 gramsDry yeast
  8. 1 tbspeach White and black sesame seeds
  9. 100 gramsSweet potato
  10. 40 gramsA. Brown Sugar
  11. 40 gramsA. Butter
  12. 1/2 tspA. Soy Sauce

Cooking Instructions

  1. 1

Make the dough in a bread maker! Add the sesame after the kneading has completed. Wash the sweet potatoes, chop into small pieces, and soak in water to release the bitterness.

  2. 2

Drain the potatoes and cook in a frying pan. Add the "A" brown sugar.

  3. 3

Add the butter and melt on low heat.

  4. 4

Finally, add the "A" soy sauce. Let cool.

  5. 5

When the dough has finished the first rising, release the gas. Now is the evil separating time!

  6. 6

Divide the dough into 20~30 pieces. I separated the dough into 30 6g pieces. (just eyeball it) Let sit for 15 minutes.

  7. 7

After sitting, re-form into neat balls and dip into the syrup from Step 4. (If the butter hardens, lightly reheat the syrup to melt it.)

  8. 8

Place the dough into the greased tin. The first layer will be the top of the bread, so place them in neatly. Place the sweet potato mixture into the cracks.

  9. 9

Let's try to bake it in a mini custard pudding tin, too. I just took a piece of dough from the normal dough amount

  10. 10

Since the dough may rise over the tin causing the sweet potatoes to fall out, keep the potatoes towards the center. If there is syrup left over after placing all of the dough into the tin, pour it over the top.

  11. 11

Let rise a second time. When they have risen to the top of the tin...

  12. 12

bake in a 200°C for 25 minutes, and then it is complete! Adjust the baking time according to your oven.

  13. 13

When it's done baking, remove from the baking tin, flip it over, and it's complete!

  14. 14

The sweet potatoes are chunky, the dough is fluffy, and it's filled to the brim with sesame!

  15. 15

Baking a mini version is super cute! You can give it as a gift.

  16. 16

Here's candied sweet potato-like sesame dough monkey bread with chunks of sweet potato.
