Light and Refreshing Carrot and Raisin Salad

My husband has loved this salad for a long time.

This salad is even better with crushed walnuts or other nuts added.

Ingredients

2 servings
  1. 1Carrot, medium
  2. 1 1/2 tbsp〇 White wine vinegar or rice vinegar
  3. 2 tspOlive oil
  4. 2 tspSugar
  5. 1generous amount 〇 Black pepper
  6. 1Raisins
  7. 1Salt

Cooking Instructions

  1. 1

    Slice the carrot into a long julienne. Sprinkle with a little salt, and let rest for a bit.

    In the meantime, combine the 〇 ingredients. Mix well with the carrot when it has wilted.

  3. 3

    Add the raisins and taste. Add some more salt if it's needed, and you're done.

  4. 4

    You can eat it right way, or after half a day.

  5. 5

    I want to eat the whole carrot so I don't peel it, and I don't squeeze out the moisture at Step 1. If it gets too salty at Step 1, rinse quickly under running water.
