I loved the salad I had at a casual French restaurant the other day, and I thought that I wanted to eat it at home too! So I uploaded this recipe. It was so delicious that I ate almost a whole plateful by myself.

I've been generous with the vinegar, so please use less vinegar, more olive oil and so on and adjust the flavor to your taste.
This tastes better if you shred the carrot very finely! Apparently this is also served often with raisins and almonds or other nuts. For 2 servings. Recipe by milestone

Ingredients

2 servings
  1. 2Carrots
  2. 5 tbspVinegar
  3. 2 tbspOlive oil
  4. 1/2 tbspBrown sugar
  5. 1● Salt
  6. 1Black pepper

Cooking Instructions

    Shred the carrots very very finely into 5 cm long strips. (You can use the shredding blade of a food processor, a cheese grater, or a slicer, etc.)

    Mix the ● ingredients together. (See Hints.)

    Add the combined seasoning ingredients to the shredded carrot a little at a time, mixing well between additions. Done! It's also delicious if left to marinate for a few hours untlil the carrot has softened.

    Variation: Add some raisins, black eyed peas, parsley, cranberries, sesame seeds, chopped bell pepper, goji berries, chopped tomato, or daikon radish.

    More variations: Add some boiled bean sprouts, dry roasted chirimen jako (salted boiled tiny sardines), corn kernels, harusame noodles, onion, orange segments, celery, or canned tuna.

    More variations: Use wine vinegar or balsamic vinegar instead of regular (rice) vinegar. Use honey instead of brown sugar.

  7. 7

    Another variation: Try adding grain mustard, basil leaves, grated cheese, or lemon juice.
