Cooking Instructions

Thaw scallops overnight in sauce pan in cold salt water to plump them back up.

Fry sliced tea smoked bacon in cast iron pan till fat releases, about 5 minutes.
- 3
Coat scallops in lemon grass infused oil, sautee in bacon fat with portobello mushrooms, no more than three minutes, serve.
