Grilled Scallops, Wrapped in Bacon

Very easy to prepare and grilled in no time. Serve as an appetizer or as a main dish with jasmine rice and grilled vegetables.

Ingredients

  1. 8fresh sea scallops (medium)
  2. 1/3 cuplight Italian salad dressing
  3. 8 slicesbacon
  4. Dashspicy honey-mustard sauce
  5. 2 sprigsthyme (garnish)
  6. 8small skewers, (soaked in water)

    Rinse scallops and pat dry with a paper towel. Place the scallops on a plate, pour the salad dressing over them, and refrigerate for 5-10 minutes.

    Cook bacon slices in a fry pan until slightly brown on both sides. Do not overcook them to crispness. Remove slices and rest on a paper towel.

    Wrap a bacon slice around the edge of the scallop. Pierce the scallop with the skewer near the end of the bacon slice. Drive the skewer through. Repeat this step for the other scallops.

    Place the skewers on a medium heat grill (cleaned, brushed, and oiled to prevent sticking). Grill about 4-5 minutes per side.

    Or, place the skewers in the oven under the broiler for about 5-6 minutes per side. When plated, add a dab of honey-mustard sauce to each scallop.

    As a main course, place 4 scallops each on a skewer. Serve with jasmine rice, grilled vegetables, etc. Drizzle the scallops with some balsamic vinegar, garnish with basil, and enjoy.
