Cooking Instructions

Measure 3 1/3 tablespoons (50 ml) each of soy sauce and vinegar, and add sugar.
The photo shows when 3 tablespoons (40 grams) of sugar is added. - 2
Spread out the chicken thigh in a pot that fits it perfectly, add the seasonings, place the chicken skin-side down, and bring to a boil over high heat.
Once boiling, immediately reduce to low heat and simmer for 10 minutes.
*Do not cover with a lid. - 3
After 10 minutes, it will look like the photo.
Flip the chicken over at this point. - 4
Simmer for another 10 minutes.

After 10 minutes, the bubbles will look like this.

Finally, turn the skin side down again and simmer for 2–3 minutes, being careful not to burn it, and it's done!

Remove the chicken from the pot, let it cool slightly, then slice.
