I wanted to make healthy and delicious homemade hamburgers for those around me who crave them. I experimented with the proportions and fermentation methods, inspired by sandwich bread, sweet buns, and whole wheat bread, and it turned out well.

I wanted to make healthy and delicious homemade hamburgers for those around me who crave them. I experimented with the proportions and fermentation methods, inspired by sandwich bread, sweet buns, and whole wheat bread, and it turned out well.
Cooking Instructions

Place all ingredients in the bread machine and let it complete the first rise.

Transfer the dough to a floured surface and let it rest for 15 minutes. Cover with a cloth.

Gently deflate the dough, divide it into four equal parts with a dough scraper, and shape each piece into a ball, pulling the edges to the center. Place seam side down.

Place the dough on a baking sheet lined with parchment paper and let it rise at room temperature until doubled in size. Cover with a cloth.

Gently brush the surface with egg wash, sprinkle with white sesame seeds, and bake in a preheated oven at 350°F (180°C) for 15 minutes.

In winter or when in a hurry, spray the dough with water after transferring to the baking sheet and let it rise in a 95-105°F (35-40°C) oven for 30 minutes.

Fill with hamburger patties, tomatoes, and onions for a Mos Burger style. The inside of the bun is white when cut.

Fill with teriyaki chicken and cottage cheese. The cut surface is slightly brown. I prefer this rustic flavor.
