Macaroni and Cheese

I grew up eating a certain boxed mac and cheese. Never real homemade macaroni. I didn't understand what the big deal was until I tasted my former mother in-law's. Hers was AMAZING! I have been trying for years to get mine to be somewhere close to hers but to no avail. So I decided to ask around (couldn't ask my ex mother in-law) and after many holidays of trying different combinations, I think we've found the winning recipe! My family loved it so much this past Thanksgiving I had to make another pan of it today (3 days after thanksgiving!) I hope everyone else likes it too

Ingredients

  1. 1 mediumonion, chopped
  2. 6jalapeños, seeded and chopped
  3. 1 boxElbow Macaroni
  4. 1 lbbacon, cut into small pieces
  5. 8 ozcondensed milk
  6. 2 cupsharp cheddar cheese, shredded
  7. 4 tbspbutter, salted
  8. 1 cupMonterey Jack and cheddar blended cheese
  9. 4 cupboiling water

Cooking Instructions

    Preheat oven to 350°F degrees

    Boil pasta noodles to firm al dente

  3. 3

    Fry cut bacon in a medium pan until about halfway done.

    Add onion and jalapeños to pan with bacon and continue to cook until bacon is crispy and veggies are tender. Add in butter and deglaze bottom of the pan.

    In a large bowl, combine pasta, milk, 2 cups of cheddar cheese, and the cooked ingredients, including the butter and drippings from the bacon.

    Pour mixture into 9x13 pan. Top with remaining cheese and put in oven for about 20 minutes, or until cheese has melted and browned lightly.

I am a proud momma to 2 kids, girl 14 and boy 9. I discovered I enjoy cooking when my husband and I were still dating. He asked me to cook him a meal that didn't come out of a box (I was used to hamburger helper, Kraft Mac and cheese, etc) So I found a recipe and cooked a good meal. As I kept finding more and more recipes I got better and started winging it. Now, it's fun and I love throwing things together. My daughter is following my lead and has found she enjoys baking. Which is great because I CAN NOT bake!! I love seeing all the recipes here and being inspired to create good meals for my family.
