Cooking Instructions

Begin by throwing the refried beans into a small pan over medium-low heat. We want to heat up the beans so they lose that just-out-of-the-can quality.

Stir in undrained green chilies and hot sauce. Taste. Stir in cumin to taste.

Smear beans in 9x13 glass dish, top with cheese of choice as next layer

Layer on sour cream, try not to disturb cheese

Make fresh guacamole: peel avocados, keep cores in bowl while mashing (keeps it from browning), stir in juice of lime, 1 tbsp. Cilantro, tomatoes and 2/3 of large red onion, salt to taste

Layer on guacamole, try not to disturb sour cream

Add cheese layer; then evenly spread pico/salsa

For color: sprinkle with rest of chopped onion and cilantro leaves
