My favorite breakfast dish is eggs Benedict. I'm just afraid of Hollandaise sauce that is made with raw eggs. Any suggestions?

Poached Egg - Perfect Every Time

My favorite breakfast dish is eggs Benedict. I'm just afraid of Hollandaise sauce that is made with raw eggs. Any suggestions?

Ingredients

7 mins
  1. 2 eachLarge eggs
  2. 1/4 cupWhite vinegar
  3. 1 smallCup (coffee cup)
  4. 1 largeslotted spoon
  5. Salt pepper
  6. 1Clean dish towel

Cooking Instructions

    Fill pot with hot water and add vinegar and 2 pinches of salt. Place over high heat with lid speeding up heating water.

    Crack two eggs in the same cup. When the water reaches boiling, turn heat down to slow simmer. Submerge the cup of eggs Gently into the water. This keeps them from breaking. Put the lid on the pot on very low for 30 seconds. Then turn the fire Off. Set your timer for 5 minutes.

    Lift the lid after timer goes off. With the slotted spoon scoop out the eggs carefully and place them in clean dish towel draining excess water. Roll your eggs from the towel to your dish. Salt and pepper.
