Here's my version of a poached egg with multigrain bread and a side of wild asparagus that I picked myself 😊

Boil the cleaned asparagus in a little salted water for 5 minutes. Meanwhile, toast the bread in the oven, then sauté the asparagus with a bit of olive oil and garlic.

Take a wide, shallow saucepan about 3 inches deep and bring the water to a boil with the vinegar. Meanwhile, crack the egg into a ladle. As soon as the water starts boiling, create a whirlpool using a whisk by stirring counterclockwise quickly with your right hand, while sliding the egg into the water with your left hand. It will thicken in a few minutes. Gently place it on the toasted bread using a slotted spoon, making sure to drain the water well.

Season with olive oil and black pepper. Add the asparagus on the sides.
A tip: Prepare the plate with the bread where you will place the egg, so you don't scramble it, as it is very delicate and you risk breaking it beforehand.
