Swedish Cucumber Salad

:nod it is simple and tasty and a good snack too

My mother used to make a similar recipe when I was younger. I was never able to get the recipe from her so this is the best recreation of it.

A recipe from my mom who's from Stuttgart :) German cucumber salad marinates the cucumbers and other veggies in a vinegar-heavy dressing so it's rather tart and super refreshing in the summer. Also no oil so very healthy!

It only takes 10 mins to add one more flavorful dish on the table 😉

The only thing i do differently on the recipe is i use one large seedless cucumber, around 12" and omit the tomatoes. Very tasty side dish, enjoy!

use red bell pepper instead of green.and add tomatoes.

Our local Thai place has a really nice cucumber salad that is very sweet. This is owr version of a cucumber salad that is not as sweet, with a pop of flavor from the pepper. We enjoy this during warmer months with various chicken or pork dishes. And now to find a decent peanut sauce recipe.... 🤔
