Combine the flour,sugar,cayenne,salt and pepper in a bowl. Dust the 1/4-inch tomato slices on both side with flour mixture.

Dip the flour-coated slices in buttermilk and then dust both sides with corn meal.

Heat vegetables oil in heavy skillet over medium high heat untill hot. Fry tomatoes in oil untill light golden brown on both sides. Add more oil if needed. Serve on lettuce with Creole dipping sauce if you want
