Spinach and Pork Liver Soup

Lately, I've been feeling inexplicably irritable and down, especially around my period. I'm not sure if it's due to age, hormonal changes, or something else. It's exhausting.
Aside from my husband (sigh), iron deficiency can also make periods uncomfortable. Lack of iron leads to anemia, which causes dizziness and shortness of breath, adding to the usual discomfort of menstruation. It's a struggle.
A bowl of pork liver soup can help boost iron levels and warm the body.

Cooking Instructions

Remove the pork liver from the package and rinse under cold water for about 2 minutes until the water runs clear.

Fill a pot about 3/4 full with water, add the rice wine and ginger, and bring to a gentle boil.

Once the soup is boiling, add the pork liver and keep it at a gentle boil over medium heat.

While boiling, skim off any foam from the surface to keep the broth clear.

After about 7 to 10 minutes (depending on the thickness of the liver, but don't overcook), add the cleaned spinach to the pot.

Let it boil for about 10 seconds, then turn off the heat. Season with a bit of salt to taste.
