I used to make these okara cookies a lot. Depending on how thick you make them, they become soft or crispy cookies.I bake them very thin.Make the dough as flat as you can when you bake them. Put the cookies in a container (plastic Tupperware, plate, etc) lined with kitchen towels, and leave them without any cover in the refrigerator.
