Coconut Milk Jam
Almost 14 years ago, I met this kind of milky jam when I was on a business trip in Kobe, Japan. A friend of mine took me to Igrekplus, a nice restaurant which also had a bakery and patisserie. Unfortunately, they are now closed...Milk jam was their speciality and it reminds me of my fun times in Kobe, Japan. No more online shop available to get that jam, so I made this similar jam!It goes good with toast, french toast, pancakes, milk, tea, and much more! This is definitely for the coconut lover!#heirloom

Coconut Bagels
Since I used some coconut milk in my cooking, I decided to try it in bread. This recipe uses shredded coconut. If you don't have any, you can use finely chopped/coarsely ground coconut.Don't substitute the coconut milk for anything else or the fragrance and the flavor will be completely different. A lovely fusion of good ol' fluffy American pancakes, and a sticky Thai coconut dessert.

Mango and Coconut No Bake Cheesecake
I tried using mangos to make my favorite cheesecake.Be careful not to cool the gelatin mixture in Step 6 too much, or it will set.If you brush the sponge generously with the syrup, it will have a lovely aroma of the coconut liqueur and be delicious. Recipe by Pu-kosan

Coconut Milk Ice Cream
I was reading the book "What did you eat yesterday?" by Fumi Yoshinaga and I saw the matcha ice cream. I took the idea of using tubed condensed milk and applied it to my favorite coconut ice cream. While it's cooling, you can make a different version by stirring it, however the texture and flavor will be completely different. So, I decided to feature this recipe. When it's fully frozen it will be hard, but it soon becomes soft. Recipe by mama ma23

Rose Coconut karanji
#GA4#Week_9#MaidaKaranji is a sweet which is usually prepared during Diwali , it’s basically a thinly rolled chapati made up with flour which is stuffed with a sweet filling made up of coconut then shaped with a half moon and deep fried until the outer layer is crisp , here I have filled the crispy pastry with sweet and delicate rose flavoured coconut filling that melts in mouth

Kaya Jam-Style Coconut Cream
I tried making Kaya jam at home, but I failed when I made it in a pot since the mixture didn't come together. The ingredients and cooking steps are similar between Kaya jam and custard cream, so I thought it might work if I made basic custard cream first, then add coconut milk using a microwave.I used a large egg. I wrote down the amount of coconut milk as 50-100 ml, but the more you use, the stronger the coconut flavor becomes so adjust the amount to your liking. Drain the yogurt really well. If the yogurt isn't drained properly, the cream will be runny and watery. Recipe by Rurian

Coconut Oil Infused Coffee
The coconut oil that I bought while in Rota Island was solid. Since it's so good for you I wanted to be able to take it every day. When I tried in in my coffee, it dissolved easily and gave off a great smell I also tried it with black tea, but the coffee tasted much better. I wanted to inform others of the wonderful benefits of coconut oil, so I uploaded this recipe. When I was in Rota Island, I was told that if you take 1 spoonful of coconut oil everyday, you'll never need to see a doctor.Recently I've been paying more attention to different kinds of oil and thinking about what's good for dieting. Coconut Panna Cotta Cheesecake with Fresh Figs
When I saw the cheesecake on @kikka_in_cucina87's profile, I immediately wanted to make it, customizing it based on the ingredients I had at home. In the panna cotta, you'll find coconut milk along with fresh cream; instead of berries, freshly picked figs. This makes it a bit less sweet, with a fresh, colorful, and delicious result ideal for this season!

Hawaiian Coconut Cake
I went to Hawaii for my honeymoon and ate a really delicious coconut cake in the cafe of the hotel. I made it at home for my own 27th birthday!Since coconut milk is on the oily side, I wanted to try making this cake without adding any oil. When adding the coconut milk into the batter, feel free to add a tablespoon of vegetable oil, if you like. Recipe by Gakkoiburi

Coconut Cake
I cheated, and used a can of frosting because I'm too lazy to learn how to make real frosting. Remember to double the ingredients if you're making two cakes. The cake recipe calls for simple ingredients, and that's why I love it. :) Enjoy if you do try it!

Coconut Milk French Toast
I used coconut milk to soak the bread for French toast and it was delicious. I topped it with finely grated coconut and sugar like a Filipino style dessert.I think the flavor of the coconut milk is enhanced if you use skimmed milk. I used finely grated coconut + sugar as topping, but you can also use maple syrup, honey, jam or whatever you like. Recipe by Hoink

Bukayo(sweetened coconut spread)
This is a homemade spread made from fresh coconut. It is sweet and you will enjoy it with your favorite bread and coffee during rainy mornings or cold nights. You can put the restof it on a jar and refrigerate it. The steps are simple but the nonstop mixing is a bit tiring. But once it done, you will love the sweetness of it. "Kumahiko" Bear Icebox Cookie
I wanted to make cute cookies without drawing the face in chocolate or icing after baking.I thought it would work if I used sesame seeds for Kumahiko.Every time when you form the shapes, keep the dough in the freezer until you are ready to use it. Then it will be easier to work with! However, please be careful not to leave the dough in the freezer for too long, otherwise it breaks easily when you slice it. After 20 minutes in the freezer, move the dough to the fridge. For about 30 cookies. Recipe by En93
