Coconut Milk French Toast

I used coconut milk to soak the bread for French toast and it was delicious. I topped it with finely grated coconut and sugar like a Filipino style dessert.

I think the flavor of the coconut milk is enhanced if you use skimmed milk. I used finely grated coconut + sugar as topping, but you can also use maple syrup, honey, jam or whatever you like. Recipe by Hoink

Ingredients

3 servings
  1. 70 mlCoconut milk
  2. 50 ml* Milk (skimmed milk if possible)
  3. 1* Egg
  4. 1/2 tbspSugar
  5. 2to 3 slices Bread of your choice
  6. 1 tbspFinely grated coconut
  7. 1 tbspGranulated sugar
  8. 1Vegetable oil

Cooking Instructions

    Mix the * ingredients together to make the soaking liquid. Soak the bread in it.

  2. 2

    Toast the finely grated coconut in an oven, and mix with the granulated sugar. You can also dry-roast it in a frying pan.

    Heat oil in a frying pan, and pan-fry the soaked bread on both sides until golden brown.

    Sprinkle on the coconut-sugar mixture and it's done.
