Cooking Instructions

Prepare the chicken,and boiled along with sliced oinons,salt and seasonings.Then fry the chicken in hot groundnut oil until brown.To be use to dress cooked rice.

Slice onions,tomatoes and grind onions,tomatoes and pepper paste season with thyme and curry.

Parboil rice for 2 minutes and then wash to remove surplus. Starch and drain the water.

Put stew on fire and add enough water,add the rice in the pot of boiling stew.Add salt and boil slowly.Boil briskly for 5-10minutes.And reduce heat,stir occasionally.

With heat reduced,wait till water level is way reduced in the pot of rice.Use a wooden turner to continuously stir the rice to prevent it from sticking together and settling at bottom of pan.This also prevents the rice from burning at the bottom of the pot.

Add in a little water if rice is gard when cooked,the colour will be bright reddish.

Serve put rice on suitable plate along with chicken,you can use vegetable to dress rice and boiled egg and carrot.

Green Mexican Rice Green Mexican Rice
I wanted to re-create the green colored rice served at Mexican restaurants. I made it with coriander and jalapeno pepper. I used a reduced-salt chicken stock, so if you are using regular chicken stock, taste it before you start cooking the rice with it and adjust the salt. This is a lightly flavored rice, so it goes well with curry too.Instead of cooking the rice in a pan, you can put it in a rice cooker at Step 3 and cook it in there instead. Long grain rice like Indica or Thai rice are suitable for this recipe, but if you don't have any you can just use regular (Japanese type) rice. If you don't like spicy food, the rice tastes great with bell pepper instead of jalapeno pepper. Serve with lemon on the side for a refreshing flavor. Recipe by yukoz1 cookpad.japan
