Cooking Instructions

Wash carrots and peel them.

Grate them in hand grater.

Chop the nuts first and whole raisins & fry them in 1 tbsp ghee. Fry the raisins until they plump up.

Next bring milk to a boil in a heavy bottom pan.

On the other side add 4tbsp ghee in a pan and add elaichi,bay leaves & grated carrots.fry until it soaks all the water and gives a nice aroma.

Now add fried grated carrot in boil milk on a medium heat and stir it often.

Do not leave the pan unattendent as the milk will get scorched.

When the milk has completely evaporated add sugar and stir continously.

Sugar will release lots of moisture and will make the entire gajar halwa gooey.

Saute the gajar halwa well until the moisture evaporates completely.

Now add fried raisins & nuts and you can add now some grated mawa in it.

When it is done gajar halwa will turns into aromatic and thicknes.

Stir and cook for just 2-3mints until the mawa blends well.

Garnish gajar halwa with almonds chopped and silver paper. Serve warm or chilled as your choice.
