This is a simple recipe from my childhood. My stepfather always made this growing up. We ate this as a side dish, as an appetizer, at cookouts,...even as a topper for other foods! He usually only did "Cucumbers & Tomatoes in Italian Dressing" but when I started making it myself in my late 20s I started adding onion because I'm obsessed with them! 😆👌 Then, in my early 30s a good friend made this at her home with the addition of green peppers as she had grown a lot of them that year. So now, my personal recipe has adapted to the inclusion of all of these wonderful foods! I also, play around occasionally with the dressing. 😎👍 This particular time I used a raspberry vinaigrette in place of Italian Dressing & I have also used regular vinaigrettes as well. This is always a nice addition to dinner or the cookout. And even as a midday snack! 👏🤤

I was looking for something to go with a steak dish I was trying, called Japanese Steak Rice Bowl. (Japanese Style Steak Rice Bowl https://cookpad.wasmer.app/us/recipes/4643016-japanese-style-steak-rice-bowl ) This Korean cucumber salad looked like it might fit the bill. It was perfect, really added a nice offset to the slightly sweet sauce on the steak. Now to be fair, I'm not a huge fan of cucumbers, it's a take or leave it kind of thing. But I tell you what, this thinly sliced English cucumber, in this light pickle was perfection. I used a medium hot red pepper powder, and it was not spicy. The flavors were fresh and just happen to be perfect with the steak. Without the lime juice, it had a very slight acidic taste, if you want it a tad more, use the lime/lemon juice also.

It was fun spending some time with Eriko this morning. She was hungry, so I thought it'd be a good idea to make a comforting breakfast to show her my appreciation for letting me stay in the house. The weather was springlike; the kitchen was filled with light, and from where I cooked I could see the beautiful sunlight. Porridge and some refreshing salad always made a perfect combo for a day like this. Eriko devoured it with enthusiasm!

Guys this is my personal salad because I like spicy food! And for me eggs with sardine and potatoes is great!! So feel free to add what you like. This salad is really adaptable💞💞💞💞💞

I made this when I didn't have an appetite.Use this recipe with apples, pears, or persimmons for a tasty seasonal salad. It's also tasty with the juice that comes out of the fruit after chilling it in the fridge.When transferring to serving dish, a dash of black pepper will add a nice touch. A recipe from my mom who's from Stuttgart :) German cucumber salad marinates the cucumbers and other veggies in a vinegar-heavy dressing so it's rather tart and super refreshing in the summer. Also no oil so very healthy!

I finally found out from Cookpad member Maria why Hungarian cucumber salads taste fresher than anywhere else in the world, and made her recipe. Tastes delicious. Here it is.
