He told me that I have to use Duncan Hines Dark Chocolate Fudge for the brownie mix and Jell-o's Cook & Serve Vanilla for the vanilla pudding mix! So I made it like he said this time. Sometimes I put some brandy in as well, even though it's not listed in the ingredients... I think these eclair squares may be a little too sweet for Japanese tastes, but it seems that Americans would love it.

Since this recipe is basically just mixing and baking, there aren't really any real tricks to it. I tend to add 2-3 teaspoons brandy to the brownie mix and 1/2-1 teaspoon to the vanilla pudding to give the eclairs a nice aroma. Recipe by Mama Imani

Ingredients

  1. 19 4/5 ozBrownie mix
  2. 3 ozVanilla pudding mix
  3. Frosting:
  4. 1 ozUnsweetened chocolate
  5. 2 tbspShortening (Crisco)
  6. 2 tbspMilk (or heavy cream)
  7. 3/4 cupPowdered sugar

Cooking Instructions

    Follow the instructions on the brownie mix box to make a cake-like brownie and bake it in a 23 x 23 cm brownie tin. Once the brownies are in the oven, follow the instructions on the box of the vanilla pudding mix to make the vanilla pudding.

    The ingredients that you will need to make the brownies and vanilla pudding (egg, water, milk, etc.) aren't included in the above ingredients list so please check them yourself. Allow the baked brownies and vanilla pudding to cool to room temperature.

    Once both the brownie and vanilla pudding have cooled to room temperature, pour the vanilla pudding on top of the brownie.

    Add the frosting ingredients to a heat-resistant bowl and melt them together in the microwave. (Heating time will vary depending on the wattage of the microwave so adjust it accordingly. I melted the ingredients for around 30 seconds using a 1200 W model).

    The frosting ingredients will separate in the microwave but if you add the powdered sugar in 3 batches, stirring gently after each addition, the frosting should become nice and smooth. When the frosting is complete, pour it over the vanilla pudding and leave the whole pudding to chill in the refrigerator for 1 hour.

    Cut the cake into whatever size you like and serve. (After about 1 day the frosting will begin to melt so serve this on the day that you make it if possible.)

    Try pouring the frosting over the pudding like this.
