Ingredients

2 x 3 minutes
2 people
  • 2squash, 8 top to bottom slices each, sliced like an apple, pit removed
  • 4 piecessalted bacon
  • 4 slicescheddar cheese, 1/8th “ thickness
  • Equipment: cast iron skillet
  • Cost: squash farm free or 50 cents, cheese 15 cents, bacon 10 cents

Steps

2 x 3 minutes
  1. 1

    Slice washed squash in eight slices, like you would slice an apple. Put 4 slices dry in medium hot skillet with 1 piece of bacon. Use bacon fat to fry 4 squash slices on one side, 3 minutes.

    Flip squash, lay cheese on top of two slices, melt, 1 minute, cover with 2 slices of squash. Fry two more minutes. When molten, serve.

I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
