Calico Beans

It's been years since I've had calico beans and my husband had never tried them. I couldn't find a recipe that I liked for them, and most used ingredients I didn't have at home. We're about 50 miles from the nearest grocery store, so running out for ingredients was not an option. I used several other recipes for inspiration, but this recipe is my creation. Enjoy

I made this a lot when on the road with my late trucker hubby on a small grill.

Well, this is technically the 4th meal with the steak and 2nd for the pork butt. Over the Easter holiday we had a cook out. My husband used the last of the sirloin to make his baked beans. I wish he’d give me the recipe lol my daughter took some pork butt and the rest went into the pot with the leftover beans. Very hearty and very delicious. Something easy to throw together in a couple of minutes when you have a Fridge full of leftovers.

I, for the life of me, cannot cook beans on the stovetop without them being crunchy or mushy. The crockpot cooks them perfectly!

Black beans one of the most versatile bean next to chickpeas on the planet, well I think so anyhow..... just saying!!! Lol By the way you may ask why summer savory? Well it just so happens that it is an anti-gas herb so if you don't want the embarrassing problems of gas, just add summer savory it helps out a bunch.

Essentially Chipotle's black bean recipe with added chipotle pepper in mole to spice it up. Great served as a side dish topped with crema and green onions. To make this into a black bean soup, reserve all of the liquid in the cans and blend half of the cooked beans.

When there’s a little bit of dry black beans, a few baby Limas, and a tad bit of pintos left and there’s not enough of one to cook for a meal. Ya mix’em all together! Throw in some ham, a lil bit’o onion and garlic…. Yum! Tasty!
