Its a rustic chowder not traditional, in the fact potatoes were substituted with cauliflower. Heavy cream substituted for coconut milk.

Ingredients

6 servings
  1. 1 lbrazor clams
  2. 2 largestalks celery
  3. 8 cupof cauliflower chopped
  4. 1 cuppetite baby carrots
  5. 28 ozcoconut milk
  6. 1/2 tspsalt
  7. 1 stickbutter
  8. 1/4 tspground black pepper
  9. 2 tbspthyme oil, see attached recipe
  10. 1/4 lbbacon
  11. 2 tbspchopped parsley
  12. 1/4 cupgrated parmesan cheese
  13. 1 largeonions

Cooking Instructions

    Clean and steam the clams remove from shells.

    Chop the onions, cauliflower, carrots, celery, and bacon sauté them in thyme oil and half of butter. Till bacon is done. Drain excessive oil.

    Add coconut milk to the onion mixture. Add the rest of ingredients

    Simmer and stir occasionally. Let thicken. Serve hope you enjoy!
