低糖黑巧克力蛋糕 Low sugar dark chocolate muffin

預先溶解黃油及巧克力後放涼 Preheat the butter and chocolate, then cool down
把蛋白和蛋黃分開,將蛋白丶1湯匙糖及檸檬茶汁打至企身Separate egg white and yolk, whisk egg white with 1 spoon sugar and lemon juice, until firm.

蛋黃和1湯匙糖打發一下Whisk egg yolk with 1 spoon sugar

拌入溶解牛油及巧克力丶面粉及梳打粉,然後打發一下Stir in melted butter, flour, baking soda and whisk a bit
把1/3蛋白拌入蛋黃漿Stir 1/3 egg white into egg yolk
然後再把蛋黃漿倒回剩下2/3的蛋白拌勻Then stir well into the rest of 2/3 egg white (如果巧克力令面糊凝固,可以打發一下 if the chocolate makes the batter firm, can whisk a bit)

以170度烤30 分鐘Bake 30 mins at 170c
