How to make soft chapati

Chapati is a famous Kenyan meal made out of dough. Chapati is normally prepared during special occasions.
Cooking Instructions

Mix the flour and salt
- 2
Add some cooking oil and water to the flour
- 3
Knead the dough until when it stops sticking on your hand
- 4
Cover the dough and leave to sit at room temperature for 30 minutes. This allows the gluten to set
- 5
Spread the dough on a clean surface, apply some oil and cut into small row sizes.

Take each cut row and roll it. This will form the layers on your chapati.

Spread the individual dough into a cylindrical shape and cook on a chapati pan. Apply oil on both sides as you cook
- 8
When ready it can be eaten with beef stew, green grams (ndengu), beans or with tea during breakfast.

Chapatis are pretty easy to make, the dough simply needs to rest for around an hour at room temperature before cooking it to yield the best results. The dough can also be made ahead, kept in the fridge and then brought back to room temperature just before preparing to save time if you're cooking for several people. Chapati type 2
These chapati are not the shortcut ones normally (see other ones of shortcut recipe ) so they do need a bit more time due to the extra steps of rolling and swirls....also you may b able to do upto swirl stage and freeze individually wrap In cling film and freeze them in freezer.for premaking the in advance InshaAllah or if you would like to do in larger batches e.g. for making later (e.g. when you wanna save time and effort!and having visitors so Eid need more of them.and alos may not have time for making them on the day)...they do taste delish though alhamdulillah

White chapati (oiled thrice and rolled out twice)
May seem alot of steps but very worth it ..at the end .make this enjoyable ..now good news for this recipe it can be pre made!So the dough balls can be frozen.and easily thawed coz they thaw very fast if stored as the dough ball stages so ..can then do the remaining process after they come back from life in the freezer!So you are looking at back to elastic and soft dough ball making sure the coldness is all gone, but again not leave for long out until too soft and hard to handle for the next steps.enjoy making these! Maini/liver chapati na chai...or na rice or na ugali ... ful of vitamin a .also rich in iron..organ foods r cheaper alternative to meats yet infact more nutritious...alhamdulillah...only may be needing more hygenic preps as it can contaminate like chicken meat etc..you can do your read about them,if unsure etc. inshaallah it will be beneficial

This is an iconic street food in Singapore. It is a very simple omelette baguette sandwich. It all started in the 60s when there are still British soldiers in Singapore. They would visit this Union Jack Club in North Bridge Road just behind Capitol Cinema. Almost every one of them will pick up this omelette baguette sandwich from this Malay stall. It is like their supper or snack before or after a few drinks. So much so that when the owner, Abdul, whenever he saw a British guy, he would ask, "Roti (bread in the Malay language) John (which is a very common British soldier's name)?" So that's how a question became the name of this sandwich.It is traditionally just plain eggs omelette baguette sandwich. Even the baguette they used is those similar to the Vietnamese's Banh Mi. Over the years and generations, Roti John had been handcrafted to suit the modernized tastebuds. The most famous version is the one with ground chicken and smeared with mayo, BBQ and chili sauce. I decided to make my own spicy BBQ sauce. I made a tomato ketchup based BBQ sauce with simple sambal, then mixed with Kewpie mayo. Everything tastes better with Kewpie.This sandwich is usually served sliced into bite-size pieces. But who eats a sandwich with a fork and knife? In closing, I hope you will give this iconic street food a try and have a bite of Singapore's heritage.


Kara Paruppu Roti Canai - lentil curry with flatbread
Dal is a staple in many households throughout South East Asia. It is served as breakfast, a side, in a tiffin box and often accompanied by roti, a flatbread made from wheat flour. When roti is served alongside a curry dal, it is known as roti canai.This Malaysian dish is made from dried split chickpeas and red lentils. The chickpeas keep their shape whilst cooking whilst the lentils break down and thicken the sauce. Lentils are an excellent source of B vitamins, iron, potassium, magnesium and zinc. They’re also a great source of plant-based protein and fibre and super cheap to buy.The dal is flavoured with Sambar, a South Indian spice mix that dates back to the 17th century in the royal kitchen of Shahaji I. Sambar powder is readily available in Asian supermarkets and there are many, many different recipes. I prefer to make my own and have listed the recipe below. It is scented with citrusy coriander, earthy turmeric, cumin, warming spices like fenugreek seeds, black peppercorns, spicy chillies and mustard seeds and fragrant curry leaves. Feel free to switch up the spices according to your taste.The Sambar spice is mixed with coconut cream, ginger and garlic to make a smooth curry paste. Malaysian flavours of curry leaves, cinnamon, star anise, kaffir lime leaves and lemongrass are added for freshness and fragrance then earthy onions and the dal.Whilst initially the dal looks watery, it thickens and tastes better after a day or two.
