Red Cabbage & Apple Soup

If you have any doubt about cooking Apple with Garlic and Onion, trust me. The Apple adds its pleasant acidity to the soup and the acidity makes this beautiful colour. If you add more acid, such as Vinegar, the colour will become redder. Three humble ingredients (Red Cabbage, Onion and Apple) make such a delicious soup.
Red Cabbage & Apple Soup

Cooking Instructions

Heat Oil in a large saucepan or pot, cook Onion and Garlic for a few minutes. Add Red Cabbage and Apple, and cook for a few minutes.

Add Stock and Bay Leaf, and bring to the boil. Lower the heat and simmer for 20 minutes or until vegetables are all soft. REMOVE THE BAY LEAF and blend until smooth using a stick blender. Season with Salt & Pepper.

Toasted Walnuts is a nice addition to this soup. Enjoy with crusty bread.
