Easy (very easy) soup to make for a wintery day - especially if you can roast the vegetables the same time as baking or cooking something else
Cooking Instructions

Place all chopped vegetables in a baking dish/ tray. Sprinkle over with generous dollop of olive oil and the spices and mustard seeds. Bake in 180 degree oven for 30-40 minutes

Put in blender with some of the stock and blend for couple of minutes till smooth
- 3
Transfer to stove top, add rest of stock and bring to boil
- 4
Serve with sprinkle of coriander / dhania leaves and a piece of toast with cheese👍

Roasted Vegetable (Use it Up) Soup
Any vegetable or quantity can be used. Those on the ingredient list were all going bad and needed to be used. This was my children dinner tonight.I omitted the salt and used only the smallest amount of olive oil. I had some left over Semi Dried Tomatoes. Today I used them to make this Creamy Soup that I have been craving for a few days. It is silky smooth and very creamy, but you don’t need Flour OR any Dairy. The soup is creamy because of Potato. Absolutely simple and easy to cook. Enjoy with crusty bread.
