Cooking Instructions

Heat the oil in a large pan and fry onions, stirring until they are soft.

Add parsnips and potatoes and cook for about 5 minutes. Then, turn off the heat.

Pour in 400 ml water in a pot, bring it to boil and pour in chicken stock, season with salt and pepper, add fried vegetables and milk, stir well, cover the pot with a lid and simmer for about 20 minutes.

Then, let it to cool and in a food processor, blend it. Return it to the pot, taste it, if needs more season, do it.

Serve it with your favourite with bread and cheese or bread and butter. Enjoy

Chicken soup
This is my own version of a mix up of Nigel Slater, Jamie Oliver's recipe for chicken soup. It's easy to make, wholesome, warming, and is meant to boost the immune system too. Unfortunately I didn't have time to make my own chicken stock as I really craved and needed chicken soup (!), so I used a ready made organic chicken stock. The perfect meal if you're feeling under the weather or downhearted.

Simple Beef & Vegetable Soup
This is a very simple soup that is actually super easy to cook. No special technic is required. You cut the ingredients and cook them in a pot until soft, then season with Salt and Pepper. Today I used Beef that was already cut for stir-fry, so I didn’t need to cut it. This recipe is for 4 servings as main meal. This is a very filling and comforting soup.

I’m happy to pay for good ingredients but hate wasting food, so I make a lot of soups from leftovers. This soup uses “uncooked leftovers”, i.e. veg that weren’t needed for Christmas dinner. It’s a creamy, smooth soup, the consistency of which can be adjusted to personal preference by varying the amount of stock used or, indeed, the quantity of veg. When the weather is cooling down, there really is no better time to make a batch of Thermomix Cauliflower Soup. It’s quick, easy, healthy and best of all, yummy! If you find that the cauliflower is taking up too much of your Thermomix bowl and you can’t fit it all in, simply press Turbo to chop it and then add in some more and repeat (before adding the vegetable stock). This soup is so creamy (and yet there’s not an ounce of cream in it!). Brilliant, right!? I love to serve this soup with brioche rolls or fresh seed and chia bread (made in the Thermomix of course!!). Enjoy this yummy soup for dinner.
