Black bean soup (using leftover bean stew)

I cooked a big batch of black beans in the pressure cooker a few days ago. I then made a sort of black bean 'stew' to use as a filling for tacos or rice. Today, I'm turning the stew into soup. Great use of #leftovers.
Cooking Instructions

In a saucepan, fry the leek in a little oil until softened.

Add the leftover black bean stew.
- 3
Dilute the stock cube or bouillon in hot water and add to the pan.
- 4
Bring to the boil, then reduce and allow to warm through.
- 5
Serve if you like with chopped coriander or chilli on top.

Ital Soup/Stew with Herbs and Scotch Bonnet 🌱
'Ital Soup' is one of my favorite ever soup recipes. With loads of veg, herbs and spice, If I had to pick a recipe that most summed up my cooking, I think it might be this one! Traditional Ital recipes include one-pot stews , incorporating local and seasonal produce, this is my take using the veg that is local and in season.This is actually more of a stew and should be enjoyed with the veg served in large chunks, topped with a little broth. Like most soups, the recipe is not an exact science and you can sub the veg to make good use of local and seasonal produce. You must use the herbs, ginger, garlic and scotch bonnet though, this is the magic!Rastafarian food is based on natural, fresh, plant-based produce. Ital comes from the word ‘vital’ and plants are considered necessary for good health. Yams are considered to be highly nutritious but you can add any squash, sweet potato and greens. Traditionally callaloo (delicious, but hard to get) is used for the greens, but kale, chard, sprouting or any seasonal veg works well. You can also add coconut milk but I prefer it without and I use lentils to get a creamy broth. I was taught to make this many years ago by a really good cook. Despite making it for years, yet I am still surprised every time at how delicious it is! #mycookbook

When I make Pumpkin Soup, I always end up having some leftover that no one wants to eat. Today I used it to make this Macaroni Cheese. I simply replaced a part of Milk with Pumpkin Soup. Use up the Veg - Seasonal Lentil Stew 🌱
Soup or Stew? Our dinner last night caused a bit of a debate! This is my go-to when I have lots of bits of veg that need using up. Almost anything can go in, but carrots and mushrooms are really nice as they soak up the flavours. This is made with a firm lentil that keep their shape - either brown or green. It also makes a nice pie filling, either a mash, sliced potatoes or pastry top. If using pasty, it’s good to thicken the sauce with a cornflour slurry do it doesn’t go soggy! #zerowaste #lentils #veg

Another soup (vaguely inspired by the Italian staple) using up vegetables before they “go off” and other ingredients from the larder. If I had any celery, that’d be in too. Basically, just use up any vegetables to hand. I only used the cherry tomatoes as well as the tinned coz they needed using up.I’ve used dried herbs coz this recipe is particularly intended for those of us confined to the house and who can’t go shopping, so it’s “jump at the cupboard door” time! But of course use fresh herbs if you’ve got them. #WastenotWantnot

Pretty close to my Ratatouille Soup but this was just a clear-out of stuff in the fridge on our return from a short break. Please note that the oregano and sugar are there to help balance the acidity inherent in the significant proportion of tomatoes. Leftover Thai style chicken soup
Had a roast chicken yesterday and I'd specially saved about half the skin and about a third of the meat for this. A supermarket rotisserie chicken would do but it's better if you roast it yourself.
