Cooking Instructions

Chop the nuts after deseeding

Chop the nuts of your choice, I have added almonds, cashews and walnuts

Add ghee in non stick skillet
- 4
Add the chop dates and keep mixing till everything comes together

Add chopped nuts and mix till it leaves sides

Let it cool a bit
- 7
Now grease your hands and make small balls. Serve.

I felt it was time for a revival! Rock cakes are awesome, right? You don’t need anything on them or with them, they stand alone as a delicious little cake, full of flavour and, as my memory serves me, satisfying. Traditional recipes has mixed spices and mixed fruit & peel. When I first made Blondies, I used my ‘Brownies‘ recipe and I simply replaced Dark Chocolate with White Chocolate. It didn’t work. White Chocolate version became too wet. You would definitely need more Flour. Today I added Macadamia Nuts, that are native to Australia. You can use other nuts such as Walnuts, Almonds OR Pistachios. But Nuts are optional.

Basil & Pine Nuts Miso Pesto
If you can’t have any ingredients, use alternatives! That’s how I have been inventing new food. When I tried to make ‘Shiso’ flavoured miso paste and couldn’t find 'Shiso', I used fresh Basil leaves. Thinking of ‘Pesto Genovese’, I used Pine Nuts instead of Walnuts. OMG!!! Miso, Basil and Pine Nuts created a new flavour. What would you use this paste for?

Home-made pesto is SO MUCH NICER than the commercial ready-made ones, and it is SO EASY to make!!!! I first made it in Florence during a family holiday years ago, and haven't stopped since. You can make a big batch and store for the week to use in all sorts of recipes. Pesto isn't only great with pasta - it also works really well in stuffed jacket potatoes, as a sauce for french beans, a spoonful in tomato soup gives the soup a fabulous tasty turn, and a teaspoon in home-made guacamole is a worthy substitute for fresh coriander... My sons even like eating my pesto spread generously on warm toast. Tradutional pesto sauce uses pine nuts but actually other nuts work really well too, especially cashews becauae their sweetness combines beautifully with the peppery and intense flavour of fresh basil. Keeps well in the fridge for a week.

5 Minute Besan Laddoos
Talking about Laddoos, i have never been too fond of them, except for Moti Choor Laddoo, which I would never dream of making at home. Any part of India and you'll find several varieties of them made with a variety of flours, and methods. As far as I can understand, for any laddoo made from using flour, the flour needs to be roasted till aromatic and during the roasting process, a certain amount of fat like ghee is used to cook the flour while roasting.
