Do take great care ,cool down a little ,the caramel inside the muffin will be extremely hot.
These can be frozen and when fully defrosted, be warmed for 15-20 sec in microwave.

Ingredients

12 servings
  1. 300 gramsself raising flour
  2. 110 gramscastor sugar
  3. 170 gramsbrazil nuts,roughly chopped
  4. 1egg,slightly beaten
  5. 180 mlmilk
  6. 60 gramsbutter,melted
  7. 12whole brazil nuts
  8. 225 gramspacket,jersey,chocolate or plain caramels

Cooking Instructions

    Grease 12 hole muffin pan. Sift flour into a large bowl,stir in sugar,chopped nuts,egg,milk and meted butter. Keep muffin mixture quite rough do not stir until very smooth.

    Spoon half the mixture into the prepared pan.place one or two caramels into centre of each muffin,top wiith remaining half.Top each with a brazil nut.

    Bake in a moderate oven about 20 minutes and golden brown.
