Cooking Instructions

Add everything in a bowl except water.

Mix them together for a few minutes then start adding water.

Knead until the dough is nice and soft, about 10mins.

Cut into 7- 8 pieces and shape into balls

Cover and let rise.

After rising, roll out each ball like chapati not too thin and cut into 4 quarters.

In a karai or pot add the oil for frying and place on medium heat.

When the oil is hot add the quarter and start frying one side and flip to the other side, remove from heat when its golden brown.

Enjoy with tea/ Coffee or mbaazi/coconut beans!

Rice Cooker Coconut Cake
This is another variation of my ‘Basic Plain Rice Cooker Cake’. I used Coconut Milk and added Desiccated Coconut. As the cake batter became too thick, I added extra Egg. Same as other Rice Cooker Cakes, the top side of the Cake can’t be browned, but it looks fine when flipped over.


Mahamri or Mandazi
Mahamri is a very popular bread in Mombasa, it's also known as Mandazi in most of the town's/cities in Kenya. The Mahamri I have always eaten in Mombasa has a circular shape while Mandazi has a triangular shape. In Mombasa, Mahamri is eaten with Barazi. Barazi is pigeon peas, cooked in coconut milk. My mum has been using this recipe for many years now and has passed it on to me.

My Airfry Chilli, Salt & Pepper Seasoned Sprouts 😍🤩
#ChristmasSideDish#SproutsI Thought of this today and bought some fresh sprouts to practice, they turned out lovely crisp and tasty on the outside. I watched a program on TV last week and the sprouts were deep fried with spices after blanching. they looked great. But I decided to part boil them drain them off until near dry. Added some olive oil all around them then added the chilli, salt & Pepper seasoning on them. Pop in the Airfry for 18 minutes on 200°C .They are really lovely.
